Smoked Paprika & Orange Roasted Chicken

24 November 2009 by local kitchen

Smoked paprika is a rich and flavorful spice, with no real chile heat but the warmth of paprika, the smoky flavor of a wood fire and somehow, the flavor of bacon. This orange & smoked paprika paste yields a very flavorful bird; while I’ve been unable to get a crispy skin despite a few attempts, the meat is highly flavored with smoky paprika and tart-sweet orange, so it is a worthwhile recipe (and the carcass makes an amazing chicken stock). […]

Cranberry Apple Butter

19 November 2009 by local kitchen

Really, I promise this is the last apple butter recipe.  At least for this year. (It’s possible, just possible, that 110 lbs of apples was a wee bit insane ludicrous ambitious.)  But this is an apple butter recipe I can get behind.  It’s really a cranberry butter recipe; very tangy cranberry flavor with the apples lending their pectin and texture and a hint of sweetness.  Again I dispensed with the cinnamon (lest I have to buy stock in Penzey’s), but […]

Tabouli

9 October 2009 by local kitchen

In keeping with the Middle Eastern theme of late (oh-so appropriate while I am traveling through the wilds of the Canadian Rockies, I know, but there is not a lot of elk or bison to be had in Northeastern America), this is a tasty, cool salad, using up lots of end-of-garden parsley and mint with the zest of lemon and the heartiness of bulghur wheat.  Simple and delicious.  Adapted from Authentic Lebanese Tabouli at Epicurious ————————————————————– Tabouli INGREDIENTS 1 cup bulghur wheat […]

Lemon Yogurt Chicken Kebabs

6 October 2009 by local kitchen

Absolutely delicious.  Really. Try this one. Adapted from Grilled Lamb Kebabs by Deb at Smitten Kitchen ————————————————————– Lemon Yogurt Chicken Kebabs INGREDIENTS Marinade 1 and 1/2 lbs boneless chicken breast 1 lb plain yogurt, preferably Greek style (I used Fage Total) 1/4 cup Kalamata extra virgin olive oil zest of 1 medium lemon juice of 2 medium lemons, about 1/4 cup 2 tbsp Greek seasoning (or 1 tbsp dried marjoram and 1 tbsp dried oregano) 1 tsp Kosher salt 1/2 […]

Quinoa and Black Bean Salad

2 October 2009 by local kitchen

Before tomatoes completely disappear, along with the sun and warmer temps, make this festive, easy and complete-protein salad for your next back-deck barbeque or weekend picnic in the park.  Simple, stores well, and is equally delicious served warm, cold or at room temperature. Adapted from Quinoa and Black Bean Salad, Gourmet, July 1994 ————————————————————– Quinoa and Black Bean Salad INGREDIENTS 3/4 cup quinoa 1 and 1/2 cups cooked black beans, rinsed (or about 1, 15-oz can) 1 tbsp red wine vinegar salt and freshly ground black […]

Fresh Peach Salsa

13 September 2009 by local kitchen

Can you tell I’ve had a lot of peaches in the house?  And there are still nectarines in the fridge… stay tuned. Tai’s first comment on tasting this salsa was “How can this be possible?”  Followed shortly by “Maybe I’ve just never had a good peach before.”  Granted, Tai is not difficult to please (one of the reasons he is so much fun to cook for), but I have to agree with him – this salsa came out really good.  Fresh, […]

Lime & Peanut Cole Slaw

8 August 2009 by local kitchen

We’ve been drowning in cabbage this season; with the cool days and plenty of rain, cabbages are growing to enormous size and there is one nearly every week in our CSA. Today I had no less than 5 heads of cabbage in the fridge: one I gave to our neighbors, two I put into another batch of Christina’s soup (this one with lots of fresh cilantro, green beans and broccoli, yum), and with another I made Lime & Peanut Cole Slaw. […]

So what? Soba Noodles.

17 July 2009 by local kitchen

Scene:  Sitting around the dinner table at Nadine, Stan and Kami’s house.  Tai & Kami are arguing about something silly, as they often do. Tai: So? Kami: So what? Soba noodles! We now say this constantly; taking our social cues from a 5 year-old is apprently how we get our jollies.  And we do – we giggle every time we say it.  Much like a 5 year-old girl. This salad is cool and refreshing, tart and crunchy with a […]

Lemon Black Cherry Muffins

16 July 2009 by local kitchen

More sweet cherry-lovin: a moist, lemony whole grain muffin with the pop! of fresh sweet black cherries.  My first thought on tasting these muffins was: WOW!  A literal taste explosion – this is not a cozy, down-home, Grandma’s apple pie kind of recipe.  This is WOW. A wake-up-your-taste-buds, can’t-believe-how-good-it-is, let-me-freeze-half-this-batch-right-now-before-I-eat-the-whole-thing kind of recipe. These muffins are indulgent – what with the lemon zest, lemon juice and lemon extract, you might as well be munching on flatbreads and cherries, lounging under a […]

Cherry Walnut Conserve

10 July 2009 by local kitchen

The sweet cherry recipes just keep rolling off the presses here at Local Kitchen.  This jam is tangy, even a bit sour, from the addition of oranges and lemons, but it is sweet on the finish with a subtle hint of amaretto and a nice crunch from the walnuts.  Nicely complex on toast and I’ll bet it will make an excellent quick marinade for chicken, pork or duck. So what is “conserve” anyway?  Near as I can tell, it is […]

Cherry Vanilla Preserves

2 July 2009 by local kitchen

Rollin, rollin, rollin, keep them cherries rollin, Rawhide! I’ve spent the week preserving cherries for all I’m worth; frozen cherries, dried cherries, cherry rhubarb pie filling, drunken cherries, cherry chutney, lemon cherry muffins and cherry vanilla preserves.  I feel like a cherry-pitting machine.  I’m whipping up cherry recipes so fast that I don’t have time to post them. It’s just the teeniest bit possible that 40 lbs of cherries was a wee bit ambitious.  Shut up, you did not tell me so. […]

Fresh Strawberry Tart

25 June 2009 by local kitchen

My Mom has been visiting for the last couple of days, in the midst of her annual summer roadtrip from her home in Asheville, NC, up to our hometown of Gloucester, MA.  Since I still had about a pound of berries left from last week’s big strawbery haul, I decided to make us a fresh strawberry tart for dessert. This tart came together quite easily as I used frozen pastry dough scraps, strawberry syrup garnered from the frozen/juiced/dried strawberries, and […]

Rose’s Strawberry Puree

19 June 2009 by local kitchen

Rose Levy Beranbaum developed a method for berry puree that involves extracting the juice, concentrating it down to one-fifth it’s original volume, pureeing the berry flesh and then adding back in the juice/syrup.  This gives the puree maximum berry flavor without cooking the pulp, which tends to lead to a caramelized, sugary flavor rather than a pure berry flavor.  While you could just puree fresh berries and call it a day, berries, and strawberries especially, contain so much water that the […]

Radish Quinoa Salad

13 June 2009 by local kitchen

I was in the City last night, meeting the girls for drinks on the Rooftop Garden at the Met (as if the views from the roof weren’t reason enough, the Roxy Paine exhibit is outstanding and worth a visit), followed by a picnic dinner along the Hudson.  Since we were picnicing, and I had a big bunch of radishes from this week’s first CSA of the season, I decided to make a quick & easy radish salad. Radishes are one […]

Wild Blueberry & Grapefruit Scones

9 June 2009 by local kitchen

I still have some wild blueberries in the freezer, picked last August up in Minnewaska State Park.  I also had a couple of pink grapefruits sitting in the fruit drawer, needing to be eaten soon.  As my friend Melissa is coming up for a visit tomorrow, I thought it would be nice to have some yummy nibbles on hand, and scones are such a versatile nibble; perfect for breakfast, an afternoon snack with tea, or a meal-on-the-go in the car.  […]
