Blueberry & Golden Plum Pie + A Giveaway!

8 August 2015 by local kitchen

This post is in partnership with MightyNest, the online retailer with a positive mission: providing the natural, organic, and non-toxic products that families seek for their homes while also giving back to schools. MightyNest is sponsoring the giveaway and provided a set of the materials to me for use in this post. This recipe started out as a cherry pie. An open-faced, glazed cherry pie, in fact. To which I added some lovely little golden plums of the I-can’t-resist variety […]

Mini Rhubarb Pie

13 June 2015 by local kitchen

Mini pie! Though they can be a bit tough to find, I love my mini, 7-inch pie plates. I have two, actually: one in the classic heron pattern used by Tai’s Uncle Charlie at Hog Bay Pottery, and one deep-dish 7-inch by Emile Henry that I snagged years ago at a little shop in Bedford Village. And they are not so mini, really: a quarter of the pie is still a hefty serving, and with ice cream the pie could […]

Sweet Cherry, Rhubarb & Meyer Lemon Pie (with a lattice top)

30 August 2013 by local kitchen

“Grief,” I said to my good friend Karen, “makes people crazy.” That was back in December, when Karen’s Mom had just passed away, and as she had been for many years the charismatic matriarch of a large Irish clan, friends, relatives and neighbors were pouring in from all over the country for the wake and funeral services. And, inevitably, making crazy demands, asking inappropriate questions, offering unsolicited advice. Why? Because grief makes people crazy. It’s a horrible thing, grief: it […]

Chicken Pot Pasties

27 November 2011 by local kitchen

We visited family in Maine for Thanksgiving and while I was happy to leave the task of roasting a 30-lb turkey to Tai’s Aunt Sue, I’m sort of bummed that I don’t have mountains of turkey leftovers to work my way through. Because this recipe was fantastic with cooked chicken but I’m sure would be equally wonderful with turkey: and with leftover Thanksgiving turkey gravy, some roasted carrots, creamed onions, maybe slivered green beans, you could create the entire filling from […]

Nectarine Ginger Pie Filling

27 September 2011 by local kitchen

It’s almost October: the leaves are turning, candy corns are crowding the store shelves and pumpkin spiced lattes are all over the Internets. So why am I talking about nectarines? Peaches and nectarines are classically August: shouldn’t I be telling you about the butternut squash risotto I made last week? (Oh, and it was good.) But September is wacky that way: it truly straddles two seasons. You look around the farmer’s market and are spoiled for choice: tomatoes, eggplant and […]

Rhubarb Blueberry Pie Filling

4 August 2011 by local kitchen

Last week, when I was valiantly trying to Jenga yet another head of kale into the fridge, I reached the familiar summer breaking point: “something’s got to go.” Turns out the most likely culprit was a partially-snacked-on quart of blueberries from the farmer’s market and a couple of pounds of rhubarb, found, and pounced upon in joy, just a few days before at Holbrook Farm. Did you know that a well-managed rhubarb plot can keep growing right into August, and sometimes into […]

Use it or Lose it! Drunken Cherry Pie

30 November 2010 by local kitchen

Hands up  – who still has turkey? Yep, I’m with you, sista. Even though we got a small bird (11.5 lbs), and we’ve been eating turkey steadily since Thursday, there is a lot left. We don’t eat a lot of meat in general, so at 3 to 4 ounces at a time… well, it’s going to take a while. I’m going to have to make a turkey soup, or chili, or pot pie, or something (I know – shocking revelations at […]

Cranberry Apple Pie

23 January 2010 by local kitchen

Another riff on Rose’s famous apple pie. Having served many versions of this pie to friends over the past couple of years, I think I can say with confidence that this one is the crowd favorite; one of the first to disappear and the first to earn talking-with-your-mouth-full praise. This version I made in a 7-inch, deep-dish pie pan for a really stacked and fruit-packed slice o’ pie (it also uses less pastry for the carb- and butter-o-phobic).  I also cut […]

Rose’s Apple Pie

5 December 2009 by local kitchen

It’s a cold, grey drizzly day here in New York.  What better time for an old-fashioned apple pie?  As you may have noticed, Rose Levy Beranbaum is one of my baking heroes, and she doesn’t disappoint with this classic apple pie.  The apples are macerated in sugar to release their juices and the sweetened and spiced apple juice reduced, with butter, to make a thick, caramel-like sauce to coat the apple filling.  The pastry crust stays crisp, the apples have […]

Drunken Cherry & Apple Pie

26 November 2009 by local kitchen

My contribution to the Thanksgiving table: preserved sweet cherries from the summer’s harvest, hand-picked, organically-grown Mutsu and IdaRed apples from Fishkill Farms, and flaky, tender pastry crust.  Happy Thanksgiving! Adapted from The Best All-American Apple Pie in The Pie and Pastry Bible by Rose Levy Beranbaum ————————————————————– Drunken Cherry & Apple Pie INGREDIENTS double recipe of Rose’s Flaky Cream Cheese Pie Crust (see Options for the cream cheese variation) 2 and 1/2 lbs baking apples 1 and 1/2 tbsp lemon juice 1 tsp lemon […]

Apple Parmesan Crumble

12 November 2009 by local kitchen

An apple a day keeps the doctor away!  If that’s true, then Tai should be a very healthy boy. The apples are still flowing daily at our house; this recipe I’ve made three times now (in smaller, half-sized batches that I bake in a tart dish or small pie pan) and Tai is thoroughly enjoying it. This crumble is simple, relatively quick, and can be easily assembled while you are putting together dinner and popped into the oven in time for […]

Canned Apple Pie Filling

6 November 2009 by local kitchen

Updated 08 October 2011. The original recipe was a modified version of the Ball Book apple pie filling; this version reflects more closely how I make a fresh apple pie, with some added apple cider and ClearJel canning starch to provide the necessary liquid for canning. There are 2 pounds of apples packed into each quart of pie filling in this version, making this a very apply, not overly sweet, and not overly goopy filling. If you like a sweeter […]

Sweet Cherry Rhubarb Pie Filling

27 June 2009 by local kitchen

The first in a long list of cherry preserving recipes.  My fingernails may be permanently dyed purple, but I’ve got 11 pounds queued up for the dehydrator, 3 pounds pitted and in the new freezer, and 3 batches of cherry rhubarb pie filling.  I’ve also thanked various deities for this amazingly handy and effective cherry pitter – and thanked Amazon for cheap-o, overnight, Saturday delivery! More recipes to follow! Adapted from Cherry Rhubarb Lattice Pie in The Pie and Pastry Bible by […]

Fresh Strawberry Tart

25 June 2009 by local kitchen

My Mom has been visiting for the last couple of days, in the midst of her annual summer roadtrip from her home in Asheville, NC, up to our hometown of Gloucester, MA.  Since I still had about a pound of berries left from last week’s big strawbery haul, I decided to make us a fresh strawberry tart for dessert. This tart came together quite easily as I used frozen pastry dough scraps, strawberry syrup garnered from the frozen/juiced/dried strawberries, and […]

Raspberry Chiffon

16 March 2009 by local kitchen

What to do when your thawed red raspberries have turned to mush.  This intensely flavored chiffon was paired with a deluxe pastry pie crust and glazed blackberry topping; the resulting pie earned rave reviews. Adapted from Strawberry Lover’s Chiffon Pie in The Pie & Pastry Bible by Rose Levy Beranbaum. ————————————————————– Raspberry Chiffon INGREDIENTS 1 lb frozen, unsweeted red raspberries 2 tsp lemon juice 3 tbsp filtered or spring water 2 tsp gelatin 1/2 cup heavy cream 6 tbsp sugar, divided 1 […]
