Chicken & Orzo Stew

29 March 2010 by local kitchen

As noted below, the original version of this recipe is what I call “restaurant fussy:” wherein almost every ingredient is cooked separately (using several pots & pans), then combined at the end. My tweaks made it not only easier to prepare, but tastier to boot: the  orzo cooks in the chicken-wine broth, the chicken soaks up flavor from herbs & greens, the apple is added at the end for maximum crispness, and the whole thing comes together in a single […]

Can Jam: Roasted Garlic & Lemon Mustard

12 March 2010 by local kitchen

I’ve had to hold myself back for this month’s Can Jam; clearly, I’ve never met an allium I didn’t like.  I mean, come on: onions, scallions, leeks, chives, garlic, scapes, ramps, shallots – the list goes on and on and they are all delicious. Did you know that there are hundreds of varieties of wild alliums, and that nearly all are edible?  According to Wildman Steve Brill, “anything that smells like garlic or onion won’t kill you.”  This isn’t my first allium canning […]

Cajun Chicken Pasta

25 February 2010 by local kitchen

While I read The Pioneer Woman’s blog regularly, and truly enjoy her writing and photography, I think this is the first time I have attempted one of her recipes.  Well, let’s face it: she lives on a cattle ranch – I don’t eat beef.  She cooks for Marlboro Man, her 4 kids, and various and sundry cowpokes, relatives, Ranch visitors, etc. – I cook for me and Tai.  Last, but hardly least, there is nothing particularly seasonal about her cooking, […]

Locavirgin: Thick Cut Pork Chops with Simple Pan Sauce

19 February 2010 by local kitchen

Pork chops can be frustrating. In my opinion, few things are as simply, wonderfully good as a pan-fried pork chop.  Simple, she says?  Ah, therein lies the rub.  As with so many “simple” recipes, it is all about the quality of the ingredients and the execution of the technique.  When a recipe has only 3 or 4 ingredients, each of those ingredients really needs to shine.  And, when the whole point of the recipe is to allow those beautiful ingredients to shine, there will be […]

Cranberry Sauce with Rosemary & Juniper Berry

12 December 2009 by local kitchen

This is a beautiful sauce, a gorgeous cranberry color flecked with deep purple bits of juniper berry.  The juniper gives a hint of piney bite to the sauce while the rosemary adds a mellow, savory note.  And I got to use the oh-so-cute, short & squat Ball Elite jars that I found up in Maine (they are impossible to find near me).   The recipe is an amalgamation of several cranberry sauce recipes I’ve tried in the last couple of years, but was mainly inspired by this […]

Mission Fig and Port Wine Mustard

3 December 2009 by local kitchen

Seems like it’s been All Mustard All the Time around here lately, but I have had all of these interesting mustard ideas floating around in my head and I want to try to them out before they disappear.  And yes, I do realize that it’s more than a bit strange to be obsessing over mustard flavors when, a) I don’t like mustard and, b) I don’t eat mustard.  But other people do, including my mustardophile husband, and a pretty little jar of […]

Fiery Habanero Mustard

28 November 2009 by local kitchen

At its simplest, prepared mustard is a basic mix of mustard seed and water, ground into a paste, and as such, could hardly be easier for the home cook. Mustard lovers may tell you, however, that the devil is in the details: which mustard seeds to use? which soaking liquid to use? Which vegetables, fruits, herbs or spices will flavor the mustard? This simple mustard gets its punch from fiery habanero chile peppers: yellow mustard seeds are soaked in habanero-infused […]

Winter Lager Mustard

16 November 2009 by local kitchen

I took a break from all sorts of apple recipes over the weekend to replenish Tai’s supply of my homemade mustard.  We are down to one 4-oz jar of the last batch of cranberry habanero mustard, and the world knows no tragedy quite like the possibility of us running out of mustard, so a-mustard making I will go. Mustard is surprisingly easy to make. Although you need to soak the mustard seeds for a few hours, once that is done the whole process […]

Cherry Walnut Conserve

10 July 2009 by local kitchen

The sweet cherry recipes just keep rolling off the presses here at Local Kitchen.  This jam is tangy, even a bit sour, from the addition of oranges and lemons, but it is sweet on the finish with a subtle hint of amaretto and a nice crunch from the walnuts.  Nicely complex on toast and I’ll bet it will make an excellent quick marinade for chicken, pork or duck. So what is “conserve” anyway?  Near as I can tell, it is […]

Homemade Berry Cordial

6 July 2009 by local kitchen

With the last two quarts of strawberries from the weekend’s picking, I decided to make some cordial.  Last year I made a wild raspberry cordial (shown in the picture, mixed with seltzer), based on Leda Meredith’s recipe, that came out quite nicely.  It’s a bit too sweet for me to drink on it’s own (one friend said that it tasted just like Manischewitz wine!), but it’s delightfully refreshing when mixed with seltzer or sparkling water and it adds a lovely berry […]

Drunken Cherries

1 July 2009 by local kitchen

Two of my favorite things: local, sustainably-grown fruit, that I get to pick myself, while spending quality time with my sweetie, on a rare and gorgeous sunny summer day, and… booze. A match made in heaven! Adapted from Brandied Cherries in The Glass Pantry by Georgeanne Brennan ———————————————————- Drunken Cherries INGREDIENTS 4 lbs cherries (sweet, tart or sour) 1 cup sugar (organic evaporated cane juice) 1/4 cup filtered water 4 cups brandy, rum, Cointreau, or other liquor METHODS Sterilize 4 glass […]

Cranberry Bean & Turkey Chili

4 June 2009 by local kitchen

Strangely enough, I’ve never made a traditional, American, ground-meat-and-beans chili.  I’ve made authentic Mexican chile verde, plenty of bean and meat stews, and certainly do my fair share of cooking with fresh and dried chile peppers, but somehow I’ve never made the standard Sunday-afternoon-football, serve-an-army chili. (I guess I still haven’t when you consider the heirloom Vermont cranberry beans and Kosher ground turkey; “Kaela Tries to Cook American Food and Fails Miserably – Film at 11!”).  It may be because I almost never […]

Homemade Vinegar

10 March 2009 by local kitchen

Vinegar translates from the French as “sour wine” and in fact, if you leave a decent bottle of red wine open for a couple of days, it does start to turn to vinegar.  Don’t throw it out!  All you need to do to make red wine vinegar is to literally let the wine sit around – preferably in a larger, more open container than the wine bottle, but given enough time, it will turn to vinegar in the bottle as […]
