Christina’s Garden Vegetable Soup

29 June 2009 by local kitchen

I’m not the biggest cabbage fan; too many boiled dinners as a kid, I guess.  However, every summer we get a couple of ridiculously huge cabbages from the CSA – we have one in the fridge right now that is the size of my torso.  So,  not liking cabbage in general, and defnitely not a fan of either sauerkraut or cole slaw, what’s a girl with a ton o’ cabbage to do? I posed this question a couple of years […]

Radish Quinoa Salad

13 June 2009 by local kitchen

I was in the City last night, meeting the girls for drinks on the Rooftop Garden at the Met (as if the views from the roof weren’t reason enough, the Roxy Paine exhibit is outstanding and worth a visit), followed by a picnic dinner along the Hudson.  Since we were picnicing, and I had a big bunch of radishes from this week’s first CSA of the season, I decided to make a quick & easy radish salad. Radishes are one […]

2 June 2009 by local kitchen

Leftover grilled asparagus, kale & pastured eggs from Saturday’s farmer’s market, andouille sausage, and homemade mozzarella combined to make today’s lunch something special. ————————————————————– Asparagus, Andouille & Spring Greens Frittata INGREDIENTS bacon grease, lard or olive oil 2 lbs potatoes, scrubbed and diced to 1/2-inch 2 links (about 6 oz) andouille sausage, sliced in half lengthwise 1 large onion, diced 1 large bunch (about 1 lb) kale, chard or other leafy green, coarsely chopped about 12 stalks cooked asparagus, tips chopped to 3 […]

Three-Bean Veggie Burger

31 May 2009 by local kitchen

It’s weird to think that just today I was making fun of Guy Fieri on the Facebook page, yet when I first made these burgers, I had never heard of him. Oh, the innocence of the Aughts. Of course, it was the Tweens that brought us this gem of a review on Guy’s American Tourist Trap in Times Square: I’m a decade-is-half-full kind of girl. . . . I must admit, I’ve been pretty successful in my New Year’s resolution to […]

Sunday Spring Cleaning: Runner Cannellini Bean Stew with Herb Pesto

17 May 2009 by local kitchen

I generally think of bean stew as being hearty, thick with sausage, tomatoes, vegetables and a thick gravy.  This one, based loosely on a recipe from Stone Barns chef Dan Barber, and presented in Rancho Gordo cookbook Heirloom Beans, is surprisingly light and Springy, with a subtle play of flavor and texture from the white beans, pesto sauce and goat cheese. Like most bean soups and stews, the recipe is extremely versatile, and well-adapted to using up odds & ends of veggies in […]

Roasted Vegetable Stock

15 April 2009 by local kitchen

I picked up three(!) new cookbooks this weekend, while visiting Melissa & Erik down in PA.  Yes, I probably need new cookbooks like I need new holes in my head, and I have no idea where I’m going to fit them (cookbook annex in the loft, perhaps?), but I couldn’t resist.  They were all (all!) 50% off (such a sucker for a bargain); it was an independently-owned cooking store (the Cookery Ware Shop – why, oh why, don’t we have one […]

Herby Grilled Potatoes

1 April 2009 by local kitchen

A gorgeous, sunny spring day, a rock scramble/hike in the woods with your honey, top down on the convertible on the way home – what could be better?  I’ll tell you what – the First Grill of the Season.  These grilled potatoes are fluffy inside, like a french fry, but crisp and smoky on the outside from the grill.  Serve with Flying Pigs Jamaican Jerk sausage, grilled bell pepper and ice cold Sam Adams.  Spring is a wonderful thing.  —————————————————————- […]

Winter Vegetable Soup

20 March 2009 by local kitchen

I know, I know – it’s supposed to be the first day of Spring, and I mention the “W” word. But while the calendar may be telling us that Spring is finally here, the snow flurries and mid-30 degree temps are agreeing with my anemic crisper drawer: we are still in the grips of winter for a few more weeks at least. While my brain and tastebuds are lusting after sugar snap peas, baby lettuce, asparagus and rhubarb, my larder is telling a […]

Sausage & Leek Frittata

16 March 2009 by local kitchen

We had a Chiquita’s Weekend at my house this weekend, which mainly consists of lots of eating, drinking and staying up ’till 4:00 am.  While there is nearly always lots of good food, and I like to try out new recipes, tradition dictates that I make a frittata at some point during the weekend.  I make frittata often, as they make for a quick & easy breakfast or lunch and are a good way to use up leftovers or excess veggies; this being the […]

Simple Vinaigrette

10 March 2009 by local kitchen

My one my favorite little cookbooks is Julia’s Kitchen Wisdom, a compendium of useful tips & techniques from one of my cooking heroes, Julia Childs.  After all, once you’ve been cooking for a while, you basically know what your favorite flavors are and how they go together; we rely on recipes for inspiration or information on how to cook a new ingredient.  But Julia’s Kitchen Wisdom contains all those little tidbits that we tend to forget if we didn’t go […]

Lina Cisco’s Bean Spread

6 March 2009 by local kitchen

In light of the ongoing Great Dried Bean Challenge ’09, I’ve been searching on-line, and in my various cookbooks, for heirloom bean recipes. I’ve come to the conclusion that there are basically three beans in America: white, red, and black. The white beans are almost always Great Northern or cannellini, the red beans are kidney or pinto (a type of kidney bean) and the black beans just “black.”  So imagine my surprise when, thinking I might try to grow & […]

Chicken & Wild Mushroom Pot Pie

4 February 2009 by local kitchen

As a kid, I loved chicken pot pie, rare for me as I was suspicious of any food that was “mixed together” and certainly anything in gravy.  As an adult, I don’t like most chicken pot pies; the gravy often tastes of nothing so much as cream, flour and salt. This dish, however, is wonderfully savory, flavorful and satisfying.  It is elegant enough for a fancy dinner party yet homey enough to serve to kids just home from an afternoon’s hard sledding.  It elicits groans […]

Kaela’s Chicken Soup

28 January 2009 by local kitchen

Chicken soup is pure comfort food.  Everyone has their favorite recipe and most have strong opinions; rice, pasta, or potatoes, peas or no peas, homemade stock or canned.  I’ve made this recipe for years – the original was from a lovely little cookbook called For Goodness’ Sake by Terry Joyce Blonder (unfortunately, now out of print).  My adaptation does change with the seasons and depending on what vegetables I have in the fridge.  My fiance likes what he calls “chicken shtoup;” when […]
