9-Chile Salsa

30 August 2010 by local kitchen

A spicy tomato salsa to liven up your Monday…2 months from now. If you haven’t noticed by now, I love the hot stuff: spicy salsa, Tabasco, wing sauce, soup, stew, BBQ and vindaloo. Even chiles in my jam! I’ve never met a chile pepper I didn’t like, not even that scotch bonnet I ate at House of Blues in Harvard Square back in ’92 (the waiter, looking appalled: “But it’s just a garnish! You’re not supposed to eat it!” “Then, why,” ask […]

Peach Salsa for Canning, Revisited

23 August 2010 by local kitchen

Ironically enough, the day we went peach picking a couple of weeks ago at Fishkill Farm, we came home, had an impromptu barbecue with our friend Alison, and opened a jar of last year’s peach salsa (rather than boiling a big pot of water, peeling peaches, and making a fresh batch). While it is still quite tasty after a year on the shelf, the salsa has definitely mellowed (it seemed just a bit too sweet and not nearly spicy enough) and […]

Baba Ganoush

27 July 2010 by local kitchen

Can it possibly be Tuesday again already?? Why yes, yes it can. So, in an effort to use up the three teeny, tiny, baby Japanese eggplants languishing in the fridge, in anticipation of getting three more teeny, tiny, baby Japanese eggplants in the CSA tomorrow, I give you: baba ganoush. There are lots of recipes for baba ganoush out there in Ye Olde Internets: most of them are pretty much the same, consisting mainly of roasted eggplant, tahini, and lemon juice.  […]

Blueberry, Lemon & Chile Jam

25 July 2010 by local kitchen

Run, don’t walk to your nearest blueberry patch and make this jam while blues are still in season. This one is classic Nischan: pure blueberry flavor, accented with the tang of lemon, and just enough sweetness to off-set the surprise heat of jalapeno and habanero peppers. So good that this is my second batch in as many weeks and I’m contemplating a third. Worth firing up the canner on a 90-degree, 99% humidity July Sunday – it’s that good. Adapted […]

CSA-Busting Vegetable Soup

21 July 2010 by local kitchen

It’s Wednesday, which means CSA day for many of you.  On Tuesday nights at this time of year, I often get “CSA panic syndrome,” wherein I look in the fridge, see it overflowing with vegetables from the last week or two, and start frantically pulling things out and whipping up a recipe in an effort to make some room for tomorrow’s box. The weather has been good to area farmers this year (so far – knocking on wood!) and despite the lack […]

Traditional Pork Chile Verde

4 June 2010 by local kitchen

Summer is in full swing here in New York and while it doesn’t seem like you would want a pot bubbling on the stovetop for hours, Chile Verde always strikes me as a quintessential summer dish: bought at a roadside stand in some dusty, hot, Mexican town on the way from one surf spot to another, ladeled into piping hot, homemade tortillas and liberally sprinkled with fresh cilantro. Heaven. This version is nearly as good (although the lack of surfing-inspired appetite may […]

Black Bean Vegetable Soup

6 May 2010 by local kitchen

Filling yet light, hearty yet summery, this soup is a study in contrasts. Most black bean soups make me think of winter or fall; thick, hearty soups flavored with ham hock or bacon, and blended unti they are almost a dip you can eat with tortilla chips. This black bean soup, in contrast, is light and summery, despite the fact that summer vegetables are still a couple of months away. I love meals like this: it makes me so happy […]

Ramp & Cilantro Pesto

20 April 2010 by local kitchen

I’m down in a cold, misty, rainy Asheville this week, spending some time with Mom.  On my list of things to do before I left for the week was to preserve anything in the fridge that Tai wouldn’t cook while I was gone (so, essentially, everything). After enjoying ramps in a lovely chickpea salad and a leeky-cheesey fritatta this week I still had a pile to use.  Just a few days ago, I saw a recipe for Ramp and Parsley Pesto […]

Flageolet Fritters

10 March 2010 by local kitchen

Eminently adaptable, thoroughly delicious, fried bean goodness. I don’t do much frying; it’s not the healthiest way to cook, and although I have none of the modern-day fatophobia, I think  my love of all things bacon keeps me quite well supplied. Also, it’s the parsimonious Yankee in me: I hate waste, of any kind, and using a couple of cups of oil once, then simply throwing it away – well, let’s just say that I’ll generally try to find a […]

Chile Verde Carnitas

8 March 2010 by local kitchen

Sad to say, this recipe was pretty disappointing, so if you are looking for a great, authentic Mexican carnitas recipe, stop reading now.  The recipe does have it’s benefits: it was easy, if lengthy, to prepare; it was not the cholesterol-and-fat-laden traditional carnitas preparartion; and, you did not have to go out and buy 3 pounds of lard.  However… next time, I will probably buy 3 lbs of lard. I’ve never attempted carnitas before, and hadn’t really thought about it; […]

Cilantro & Mint-Infused Wheat Bread

2 March 2010 by local kitchen

This herb-infused wheat bread is lovely; soft, flavorful, excellent with dinner, as toast with butter, or on its own.  I made two loaves yesterday, as part of the birthday dinner menu for our friend Alison. While it can be a bit of a challenge to knead (mostly because I am always too lazy to chop the pine nuts and they come popping out of the dough while kneading), it is an easy bread dough to make and a forgiving one […]

Chickpea Stir-Fry

21 January 2010 by local kitchen

I must confess that it has never occured to me to stir-fry chickpeas (or any bean, for that matter). I had cooked chickpeas in the fridge, leftover from making hummus the other day and I was looking for something quick & easy, yet delicious, for dinner.  I also had some romaine lettuce (clam-shell packed and shipped from California, which Mom left here at Christmastime) that needed using, but somehow I couldn’t work up any enthusiasm for month-old-California-lettuce-mid-winter salad. (Shocker, that.) Enter chickpea […]

Dark Days: Venison Chile Verde

18 January 2010 by local kitchen

Friends of ours gifted us with some venison this week, received from friends of theirs who had shot and butchered a deer.  I’m not exactly sure where the deer came from but I’m pretty confident that it was somewhere in the Northeast; our friends live in Connecticut, not far from Mystic, and the deer probably came from either New Hampshire or the Adirondacks in NY.  It seemed a perfect candidate for this week’s Dark Days spotlight meal. I’m not a […]

Black Bean Veggie Chili

27 December 2009 by local kitchen

As a nice respite from all of the rich, heavy holiday food, as well as a warm bowl of comfort food against the chill and dreary 39-degree rainy day, yesterday I made a big pot of chili. Packed full of veggies and protein-laden black beans, this dish is winter locavore cooking at its best: peppers chopped and quick-frozen back in August only need pouring into a measuring cup; sweet corn, blanched and cut off the cob, frozen at the peak of […]

Spicy Black Bean & Chickpea Soup

2 November 2009 by local kitchen

When it comes to habanero peppers, I never seem to learn.  I always think, “Well, it’s a small pepper, and I’ll take all the seeds out – it won’t be too spicy.”   Yep.  That’s what I always say, usually about an hour or two before I’m pawing through the cupboards, looking for an additional something that will absorb a bit of the excess heat. Tonight was no exception.  I set out to a make a spicy, but not killer-spicy, black bean soup. […]
