Dark Days: Venison Chile Verde

18 January 2010 by local kitchen

Friends of ours gifted us with some venison this week, received from friends of theirs who had shot and butchered a deer.  I’m not exactly sure where the deer came from but I’m pretty confident that it was somewhere in the Northeast; our friends live in Connecticut, not far from Mystic, and the deer probably came from either New Hampshire or the Adirondacks in NY.  It seemed a perfect candidate for this week’s Dark Days spotlight meal. I’m not a […]

Black Bean Veggie Chili

27 December 2009 by local kitchen

As a nice respite from all of the rich, heavy holiday food, as well as a warm bowl of comfort food against the chill and dreary 39-degree rainy day, yesterday I made a big pot of chili. Packed full of veggies and protein-laden black beans, this dish is winter locavore cooking at its best: peppers chopped and quick-frozen back in August only need pouring into a measuring cup; sweet corn, blanched and cut off the cob, frozen at the peak of […]

Easy Chicken Vindaloo

2 December 2009 by local kitchen

I love me a good vindaloo. Vindaloo is always spicy, but I like it really spicy: make me cry, but give me a flavor profile beyond just “hot,” and I’ll call it a success. I can rarely get vindaloo spicy enough in Indian restaurants (I suppose I can’t blame them when they look dubiously at my pale, freckled face and fuzzy red head, ordering my vindaloo “really spicy.” They just assume that I am not used to “Indian-spicy.” Little do they know!). But the […]

Fiery Habanero Mustard

28 November 2009 by local kitchen

At its simplest, prepared mustard is a basic mix of mustard seed and water, ground into a paste, and as such, could hardly be easier for the home cook. Mustard lovers may tell you, however, that the devil is in the details: which mustard seeds to use? which soaking liquid to use? Which vegetables, fruits, herbs or spices will flavor the mustard? This simple mustard gets its punch from fiery habanero chile peppers: yellow mustard seeds are soaked in habanero-infused […]

Spicy Black Bean & Chickpea Soup

2 November 2009 by local kitchen

When it comes to habanero peppers, I never seem to learn.  I always think, “Well, it’s a small pepper, and I’ll take all the seeds out – it won’t be too spicy.”   Yep.  That’s what I always say, usually about an hour or two before I’m pawing through the cupboards, looking for an additional something that will absorb a bit of the excess heat. Tonight was no exception.  I set out to a make a spicy, but not killer-spicy, black bean soup. […]

Easy Chicken Stew

23 October 2009 by local kitchen

We’re baaaaaaaaack!  There’s just nothing wrong with a month-long honeymoon exploring the wonder that is British Columbia.  Eventually, I have a post planned on all the various wonderful places we ate in BC, but for now, I am totally thrilled to be back in my kitchen. I really did miss cooking.  Although we did rent a few places with full kitchens in our travels, there was just never time for real cooking in between the hiking, drinking, kayaking, partying, biking, […]

Chile Verde Base

29 September 2009 by local kitchen

Throughout the year, I make a kick-ass chile verde, a Mexican stew of roasted tomatillos, jalapeño peppers, cilantro, garlic and slow-cooked pork shoulder. My recipe is only slightly adapted from Elise’s version on Simply Recipes, courtesy of her friend Arturo Vargas, and it’s a staple over the long, cold months of winter. Tomatillos, however, the main ingredient in the vegetable base, have a short season here in the Northeast: they ripen at the tail end of tomato season and, if […]

Fresh Peach Salsa

13 September 2009 by local kitchen

Can you tell I’ve had a lot of peaches in the house?  And there are still nectarines in the fridge… stay tuned. Tai’s first comment on tasting this salsa was “How can this be possible?”  Followed shortly by “Maybe I’ve just never had a good peach before.”  Granted, Tai is not difficult to please (one of the reasons he is so much fun to cook for), but I have to agree with him – this salsa came out really good.  Fresh, […]

Peach Cascabel BBQ Sauce

11 September 2009 by local kitchen

Cascabel peppers, also known as chile bola or rattle chiles, because of the way the seeds rattle around inside the small round dried pepper, grow wild on the Pacific coast of Central America and Mexico.  In this country, you generally only find the dried peppers, or sometimes the ground powder.  Last winter I bought a bag from Penzey’s, intent on making some recipe or other, which I apparently never made, so I had a mostly full bag of these little […]

Pickled Peppers

4 September 2009 by local kitchen

Peppers seem to take forever to appear: like dreaming of strawberries in March, I start thinking of peppers when the first hot day comes around in June; then I wait, and wait and wait.  My pepper plants were started way back in February.  I’ve been harvesting jalapenos for a while now, but the red chile peppers are only just turning red, and the red bell peppers are still smaller than a tennis ball and dark green.  All I can say […]

Flaming Wing Sauce

28 August 2009 by local kitchen

Yet another great way to preserve tomatoes, especially when you are not in the mood for the usual suspects.  This recipe has the benefit of limited prep time; no peeling or food milling of the tomatoes required, not nearly as much chopping as a pasta sauce or salsa, and can be easily doubled or tripled if you have a lot of tomatoes on hand.  There is a long list of ingredients, but most of them are spices and the measuring […]

Fresh Cantaloupe Salsa

10 August 2009 by local kitchen

After a cool, damp weekend, with honking geese flying overhead each evening, it felt like an early winter was knocking at the door.  Lo and behold my surprise to wake up this morning to sticky humidity and a forecast of 88 degrees!  I guess summer is not completely done with us yet. This fresh salsa is exactly what the doctor ordered for a sticky, hot August summer day: cool, crisp, tasty and takes about 10 minutes to prepare, with not […]

Lime & Peanut Cole Slaw

8 August 2009 by local kitchen

We’ve been drowning in cabbage this season; with the cool days and plenty of rain, cabbages are growing to enormous size and there is one nearly every week in our CSA. Today I had no less than 5 heads of cabbage in the fridge: one I gave to our neighbors, two I put into another batch of Christina’s soup (this one with lots of fresh cilantro, green beans and broccoli, yum), and with another I made Lime & Peanut Cole Slaw. […]

Cranberry Bean & Turkey Chili

4 June 2009 by local kitchen

Strangely enough, I’ve never made a traditional, American, ground-meat-and-beans chili.  I’ve made authentic Mexican chile verde, plenty of bean and meat stews, and certainly do my fair share of cooking with fresh and dried chile peppers, but somehow I’ve never made the standard Sunday-afternoon-football, serve-an-army chili. (I guess I still haven’t when you consider the heirloom Vermont cranberry beans and Kosher ground turkey; “Kaela Tries to Cook American Food and Fails Miserably – Film at 11!”).  It may be because I almost never […]

Sunday Spring Cleaning: Smoky Black Bean Dip

6 April 2009 by local kitchen

In the grand tradition of Spring, I’ve been doing some spring cleaning of late. Since the weather has not been optimal for cleaning windows, and it hasn’t yet been warm enough to transition to the summer wardrobe, I’ve been concentrating on cleaning out the larder: using up canned goods that are approaching one year old, making room in the freezer for a new season’s bounty, and digging way back into the recesses of the food cabinet for those long-forgotten items; […]
