Pumpkin Potato Pancakes

31 October 2010 by local kitchen

Update: I’ve made these in the past with pumpkin purée, which works fine, but I prefer them this way, with grated pumpkin flesh. The recipe is quite adaptable, so I highly recommend frying a test pancake first and making adjustments to egg, flour, and/or seasonings as you go. Enjoy! ~October 2013 . . . . . A spooky, spicy pumpkin-and-potato pancake for your Halloween pleasure! OK, so there’s nothing spooky about these pancakes (unless you’re harvesting pumpkins from a nuclear test […]

Oven-Braised Barbecue Chicken

28 October 2010 by local kitchen

This was my lunch on Tuesday, such a glorious, warm, sunny day that I was compelled, despite a crazy-busy week and a looming analysis deadline, to enjoy it out on the back deck. Because basking in the sun, watching the leaves drift down, and reveling in sticky, messy, moist & delicious, finger-looking good barbecue chicken is soon going away, not to be seen again around these parts for many moons. If I were a Brit, I’d call this recipe “cheap […]

Valencia Curd

10 June 2010 by local kitchen

Here I am in South Africa and while citrus season is long past back home in the States, it’s just beginning down here south of the equator. So what better way to celebrate the season than with a tangy, brilliantly orange dessert curd?  In this curd recipe, you do not strain out the zest, in order to maximize the orange flavor, and while it does not produce the silky smooth texture of other curds, that is more than made up […]

Chicken Braised in Tomato & Garlic

22 May 2010 by local kitchen

I tried another recipe from The Pioneer Woman and another chicken recipe at that.  The first, a cajun chicken pasta, I made a lot of changes to, and frankly, wasn’t overly thrilled by my version. This one, I made only a few minor changes and… I wasn’t overly thrilled. Sigh. It seemed so promising; chicken, browned in butter & olive oil then slowly braised in my home-canned heirloom tomatoes, a nice Pinot Noir, plenty of fresh, farmer’s market garlic, and […]

Can Jam: Apple Cider Jelly with Rosemary & Peppercorn

22 April 2010 by local kitchen

I should have left well enough alone. After the glorious triumph of my Can Jam Lemon Lavender Marmalade, I should have known to just quit while I was ahead.  Sadly, I so rarely take my own sage advice. There’s a reason why I never make jelly.  Jelly is basically juice + sugar.  Since there is no fruit pulp to round out the texture, a jelly really needs more sugar than a jam, or whole fruit preserve, in order to have any structure.  There […]

Can Jam: Lemon Lavender Marmalade

18 April 2010 by local kitchen

April’s Can Jam assignment was herbs, which are, according to the Tigress “generally considered the leafy green parts of a plant (flowers, too!) while spices are derived from other parts of the plant, particularly the seeds, berries, bark and roots.”  It’s a lovely category; wide open with choices, and I’m excited to see what the variety & inventiveness of the Can Jammers can deliver. Problem is, here in New York, as Marisa reminds us,  April really is the cruelest month: things have […]

Gingery Almond Biscotti

2 April 2010 by local kitchen

I made a batch of these the other day, to send off as gifts: one as part of a belated birthday present, and another as a thank-you present to our wonderful friend Stan, who does our taxes.  Of course, along the way there were several that were ‘mishapen’ or ‘too short’ or ‘too ugly’ to go in the gift packs (yet clearly not too short, ugly or mishapen to be eaten).  Now I wish I had made a double batch. […]

Dark Days: Christmas Limas with Caramelized Onions & Bacon

30 March 2010 by local kitchen

Something a little special for the last Dark Days Challenge of the season: local heirloom lima beans! “Local” because I smuggled them home in my luggage after my trip to San Francisco last spring.   “Dark” because it’s been raining for three days straight and the sun is a distant, fond memory.  “Challenge” because, well – they’re lima beans. Let’s face it, the lima bean gets no love.  I’m not even sure why. I can’t remember a single time that I even tried a […]

Christine Ferber’s Pumpkin Jam with Vanilla Bean

24 March 2010 by local kitchen

Sigh. I tried – I really tried.  Following this conversation on Tigress’ blog, regarding my disappointment in the recent purchase of Mes Confitures, Christine Ferber’s famous jam & jelly cookbook, I decided that, in order to give the cookbook a fair shake, I would attempt one of the recipes, as is, without any tweaking from me (you have no idea how hard this is for me).  Since I had lots & lots of pumpkin to use up, I decided to try […]

Pumpkin Cascabel Marmalade

22 March 2010 by local kitchen

Can you believe that I still have a pumpkin from last Fall?  Well, had a pumpkin, I should say.  The vernal equinox, not to mention the 70+ temps this weekend, convinced me that it was finally time to say goodbye to the Last Fall Pumpkin, which has been gracing our countertop, courtesy of Fishkill Farm, since late October. So in celebration of the first day of Spring, I took my biggest knife to this 14 lb sucker and hacked it’s […]

Tuscan White Bean Bruschetta

15 March 2010 by local kitchen

An easy way to use up leftover cooked beans, yet a delicious appetizer that tastes celebratory and rustic at the same time.  A win-win! It’s been all flageolet beans, all the time, around here lately, but that’s what happens when you cook up a pound at once and then keep finding new ways to enjoy their deliciousness.  This recipe is quite simple, uses basic pantry staples, and is a great way to use the tag ends of frozen kale or other leafy […]

Dark Days: Crunchy Baked Chicken Strips

15 March 2010 by local kitchen

A little spice, a little crunch. A few minutes to put together and you have a simple lunch or dinner that even the kids might like. This was a very haphazard recipe; I had been planning on making spicy chicken strips, chicken breast fingers essentially braised in a hot sauce until cooked through. They are quite delicious and handy to have on hand for sandwiches, salads and snacking.  Yet I felt the need for something crunchy.  So I changed plans, […]

Roasted Garlic & Walnut Tagliatelle

14 March 2010 by local kitchen

The flavor of this earthy peasant pasta dish is belied by the simplicity of its preparation: it is rich yet sutble, with a layering of fruity olive oil, sweet roasted garlic and just slightly bitter toasted walnuts, all blending to create a taste that is more than the sum of its parts. Homemade pasta and slow-roasted garlic make this a pleasant (and aromatic) lazy Sunday project; but if you have roasted garlic on hand, leftover, perhaps, from another recipe, and some good storebought pasta, this satisfying […]

Cilantro & Mint-Infused Wheat Bread

2 March 2010 by local kitchen

This herb-infused wheat bread is lovely; soft, flavorful, excellent with dinner, as toast with butter, or on its own.  I made two loaves yesterday, as part of the birthday dinner menu for our friend Alison. While it can be a bit of a challenge to knead (mostly because I am always too lazy to chop the pine nuts and they come popping out of the dough while kneading), it is an easy bread dough to make and a forgiving one […]

Dark Days: Roasted Leek Confit Pizza

28 February 2010 by local kitchen

This roasted leek confit was quite fabulous and formed the basis of an impromptu Saturday-night pizza dinner with friends, big and small.  Handily for me, most of the elements of the pizza were also local, making it a perfect spotlight meal for this week’s Dark Days Challenge.  I highly recommend it after a day of sledding and building snowwomen in the yard! ————————————————————- Roasted Leek Confit Pizza INGREDIENTS 1 recipe Quick(er) Whole Grain Pizza dough olive oil about 1 oz hard […]
