Asiago and Green Apple Omelet with Chipotle Bacon

18 December 2009 by local kitchen

Christimas is only a week away and it’s been a crazy week between cooking and prepping for our annual Christmas party, cleaning the house, decorating the tree, stringing the house lights, wrapping presents, writing holiday cards – phew!  Add in a visit from Mom last weekend, my car breaking down (and the subsequent attempts at repairs by the long-suffering Tai), trying to get wedding thank-you notes out the door, and some last-minute jobs from clients, and it’s a wonder I’ve managed to […]

Dark Days: Herb-Roasted Turkey Breast

14 December 2009 by local kitchen

Ever notice how when one thing runs out in your pantry everything else seems to follow? I had one of those weeks. We have a Christmas party every year, and I’ve been prepping all week. In making pastry dough for this apple pie and mini swiss chard quiches, I ran out of Wild Hive pastry flour and had to pick some up from the store (and let me tell you – Bob’s Red Mill is SO not the same!). Then I noticed that the all-purpose and […]

Dark Days: Rhubarb Rosemary Pork Cutlets with Onion & Beet Sauce

4 December 2009 by local kitchen

Some meals are a revelation.  Strangely enough, I often find that when I’m not really thinking about it, throwing something together from the contents of my fridge on a busy weeknight, is when I make my most startling discoveries.  This meal fits the bill. I had those pork cutlets, of the not-cutlets-but-scones fame.  They were thawed a couple of days ago and really needed to be cooked.  (Not only am I completely obsessive about not wasting food, there has got to […]

Easy Chicken Vindaloo

2 December 2009 by local kitchen

I love me a good vindaloo. Vindaloo is always spicy, but I like it really spicy: make me cry, but give me a flavor profile beyond just “hot,” and I’ll call it a success. I can rarely get vindaloo spicy enough in Indian restaurants (I suppose I can’t blame them when they look dubiously at my pale, freckled face and fuzzy red head, ordering my vindaloo “really spicy.” They just assume that I am not used to “Indian-spicy.” Little do they know!). But the […]

Dark Days: Goat Cheese, Chive and Cranberry Scones

29 November 2009 by local kitchen

I had every intention of making a local dinner of Flying Pigs pork cutlets stuffed with CSA frozen arugula, Nettle Meadow chevre and Cranberry Hill organic cranberries.  Tai was drooling at the mere thought. However, as the afternoon waned I realized that I was just not in the mood for meat, even though the pork was thawing away on the counter.  So I stuck Flying Pigs back in the fridge for tomorrow and made the same basic flavors (and ingredients) into […]

Smoked Paprika & Orange Roasted Chicken

24 November 2009 by local kitchen

Smoked paprika is a rich and flavorful spice, with no real chile heat but the warmth of paprika, the smoky flavor of a wood fire and somehow, the flavor of bacon. This orange & smoked paprika paste yields a very flavorful bird; while I’ve been unable to get a crispy skin despite a few attempts, the meat is highly flavored with smoky paprika and tart-sweet orange, so it is a worthwhile recipe (and the carcass makes an amazing chicken stock). […]

Dark Days: Apple Cider Chicken with Sage Mashed Potatoes

21 November 2009 by local kitchen

About a week ago, I signed up for the Dark Days Challenge, hosted by food blogger (not so) Urban Hennery, in which locavores strive to keep in touch with their local foodshed throughout the long, cold, dark days of winter and to “cook one meal each week focused on SOLE (sustainable, organic, local, ethical) ingredients” and write about it on their blogs. Shouldn’t be such a challenge for a self-styled Local Kitchen blogger, no?  Well, you might be surprised.  Atlhough I have a chest freezer stocked full […]

Winter Greens Risotto with Heirloom Pork Sausage

5 November 2009 by local kitchen

We had some friends over for dinner last weekend: cheeses from Plums Plums in Pound Ridge, bread from Wave Hill Bread in Wilton, curried apple chutney, roasted pumpkin soup, winter greens risotto and an apple tart. Phew! You can tell what kind of week I’ve had that I’ve only just managed to get one of these recipes up by Thursday night. Risotto is a wonderfully versatile dish and easy to make, despite its rather terrifying reputation. Yes, you have to stir […]

Linguica Pizza

29 October 2009 by local kitchen

I grew up in Gloucester, MA, at the tip of Cape Ann on Massachusetts’ North Shore, then mostly a commercial fishing town and a summertime escape for wealthy Bostonians. Like many fishing towns or villages in New England, Gloucester had, and still has, a large community of Portuguese immigrants and their Portuguese-American descendants.  If you grew up in Gloucester, or New Bedford, Fall River or even East Cambridge, you already know the wonder that is linguica (pronounced “lin-GWEE-sa”).  If you did […]

Easy Chicken Stew

23 October 2009 by local kitchen

We’re baaaaaaaaack!  There’s just nothing wrong with a month-long honeymoon exploring the wonder that is British Columbia.  Eventually, I have a post planned on all the various wonderful places we ate in BC, but for now, I am totally thrilled to be back in my kitchen. I really did miss cooking.  Although we did rent a few places with full kitchens in our travels, there was just never time for real cooking in between the hiking, drinking, kayaking, partying, biking, […]

Kale & Arugula Lasagna

16 September 2009 by local kitchen

A rich and savory lasagna, the execution is deceptively simple as this one is all about the sauce. Jam-packed with vegetables and working equally well with fresh summer tomatoes or canned bounty in the depths of a frigid February, this lasagna is Ugly Food at its finest: warm, comforting, satisfying. While leafy greens form the backbone of the flavorful sauce, don’t be afraid to experiment with whatever fresh veg is on hand: carrots, fennel bulb, fresh basil or oregano, eggplant […]

Goat Cheese & Herb Gougeres

1 September 2009 by local kitchen

“Real” cooking: [reel kook-ing] adj., verb; techniques and skills used in preparing food that should have been learned, at culinary school, at your grandmother’s knee, from a dedicated chef-type friend or a really detailed cookbook, before you tried to wing it, in your usual slapdash fashion, without having a clue what you were doing. So, do you know what a gougere is?  I didn’t. Not until some determined Googling informed me that a gougere is a savory puff pastry, made […]

Sausage Bread Redux

14 August 2009 by local kitchen

OK, seriously, I know it’s hard to believe, but this bread tastes better than it looks.  Scout’s honor.  Spicy Italian sausages, sauteed onions & garlic, sun-dried tomatoes and fresh mozzarella, all wrapped inside herb-filled whole wheat bread. I’m drooling, but I can’t have any yet, because this bread is destined for a Very Special Occasion: my bachelorette party up in the Catskills this weekend.  A dozen girls, (at least) a dozen bottles of champagne, a hot tub and sausage bread.  And […]

Nadine’s Birthday Cake

3 August 2009 by local kitchen

Nadine’s birthday was about a week ago and last week I went over to her place for a little birthday celebration: a few presents, a little play-time with her daughter Kami, and, of course, cake.  I’m lousy at decorating cakes.  Tai is the trained pastry chef at our house and he is great at it: he breaks out his cake turntable (yes, doesn’t everyone have one?) and makes a beautifully smooth frosting layer, pipes perfect litttle flowers and curlicues, and seems […]
